Black Bean Sopes w/Avocado & Red Onion

Just a pretty picture to start the week off right!

We had a bunch of guests and events this weekend, so nothing exciting to report.  We did spend the rest of our budget on some cream-cheese and bagels at the Coop (.94 + $1.72=$2.66) to have for breakfast on Sunday.


Crepes w/Apple Butter and Pears

The other night Phil wanted something for dessert that wasn’t too sweet or terribly bad for you and could be made quickly.  I thought CREPES!  With fruit.  I used a cup of flour, 1/2 to 3/4 cup soy milk, a pinch of salt and an egg.  Blended it all up, heated up the skillet and made two crepes.  A smear of apple butter, some diced pears and a sprinkling of powdered sugar and we had a yummy dessert in about 7 minutes.  The leftover batter went into the fridge (crepe batter is actually better after a day of resting in the fridge).


And…another dollar!

Sorry for the slow newsweek folks, but we’ve got friends in town and are busy entertaining. Our kind friends did bring us beautiful dried beans from San Francisco and some veggies from a garden. I spent $1 getting some onion rolls. Our total left for the week is now (drumroll please): $3.17

In making things news, we made some homemade sopes with black beans, diced avocado, zucchini and red onion for dinner the other night.  I am still loving masa harina!

It might cool down long enough this weekend that I can try to make some bread – it’s the one thing I miss about winter cooking.


Update – another $1

Forgot to mention Phil bought some rolls the other night, setting us back $1 and I bought some bananas (3) from my fruit guy for .50 – they were a quarter apiece, but one looked icky, so he gave it to me. Little does he know that that banana is PERFECT for banana bread or banana ice-cream. MWAHAHAHAHA. Total for the week: $4.17.

And so that this post isn’t a complete waste of space, I give you…a beautiful tomato!

Hot Dog Ragu

Yeah, this sounds like something off of an extra crappy Food Network show, but we had some leftover veggie dogs and wanted some protein to go with some pasta sauce.

We’ve done ragus before, so I don’t think we need a full recipe, but this once included the following:

2 veggie hot dogs, chopped
1 red onion, diced
3 garlic cloves, smooshed
a bunch of heirloom tomatoes from my aunt’s garden (the subject of a later post)

We served it over spiral pasta with a blue cheese biscuit on the side. Tina made the biscuits, incorporating a leftover lump of cheese that was starting to get a little questionable.

This Week’s Receipt

I think we got a lot of good stuff this week.  I am particularly excited about doing something with the blackbeans and avocado…

Last night we had the last of the spelt berries and I am a big fan.  If you haven’t tried them, I highly advise seeking them out.  They have an excellent chewy texture that makes a lovely side dish or you can throw them in a salad for some extra punch.  Must. Buy. More!

Where and What

30/W was our of town for the weekend. We’ll have new material up shortly on subjects such as:

– My aunt’s heirloom tomatoes, secreted back from St. Louis in our carry-on luggage.
– Our discovery of wheat berries.


Hot Dawg

From our “All-American” dinner the other night.  Hot dog with homemade veggie slaw and potato salad.  Yum!  I used our cast iron griddle pan and it made all the difference (no room for a grill on our fire escape, sadly).

This Week’s Recap

Phil actually went to the Coop on Sunday and got:

  • barley
  • eggs
  • snowpeas
  • tempeh
  • cashews
  • salad mix
  • 2 roly poly squash
  • white cucumber
  • TOTAL: $13

I spent $2.50 at the Pioneer Supermarket on Cabot Sharp Cheddar (on sale, 2 for $5) and then $3 at Jack’s buying veggie dogs (I wanted to have an “American” night of veggie dogs and potato salad), a baguette (not so American “buns” for aforementioned dogs) and mustard (necessary!). I also went to Chinatown and got 4 apples for $1 for my apple fix.  So the total for the week is $19.50.
