Crepes w/Apple Butter and Pears

The other night Phil wanted something for dessert that wasn’t too sweet or terribly bad for you and could be made quickly.  I thought CREPES!  With fruit.  I used a cup of flour, 1/2 to 3/4 cup soy milk, a pinch of salt and an egg.  Blended it all up, heated up the skillet and made two crepes.  A smear of apple butter, some diced pears and a sprinkling of powdered sugar and we had a yummy dessert in about 7 minutes.  The leftover batter went into the fridge (crepe batter is actually better after a day of resting in the fridge).

    My latest 5 minute dessert has been broiled bananas. Halve a banana lengthwise, sprinkle with brown sugar, dot with a small amount of butter. And if you are feeling wild, some cinnamon, nutmeg, mace or what have you. Broil until bubbly, and then serve with a dollop of plain yogurt. Awesome!

    Recipe: Thai Eggplant

    Here’s the Thai Eggplant recipe we brought to the picnic.

    3 Japanese eggplant
    2 shallots
    1/4 lb ground pork, chicken, or veggie crumbles (I fried up a veggie burger and chopped it up)
    Scallions and cilantro to garnish

    Spicy Sauce
    2 cloves garlic
    3-4 thai chiles
    juice of one lime
    2 1/4 tblsp fish sauce or soy sauce
    pinch of sugar

    Roast the eggplant then peel and dice (or leave peel on so it’s doesn’t turn to mush)
    Saute pork or veggie crumbles, add shallots and stir, add eggplant
    stir in spicy sauce
    garnish with scallions and cilantro

    Enjoy!
