Heirloom Bean Curry

This week has not been very exciting for us.  In fact, there has been a lot of beans and quinoa and rice.  Actually, just one kind of bean.  My good friend gave us a bag of heirloom beans as a gift for us letting her stay in our apartment.  We just got a pressure cooker (!!!) and decided to try out the beans, no soaking required!  The pressure cooker is pretty awesome and we made a type of curry with the beans, some crudite leftover from the wedding shower and brown rice.  I also made the reliable and delicious flatbread to go along with the meal.

The instructions for the pressure cooker recommended cooking a large portion of beans, so we cooked the whole 1 pound bag and have been eating them all week.  Beans with arugula salad, beans with red quinoa, homemade veggie burgers made out of the beans…you get the idea.  Guess what?  We STILL have some left.  So yeah, if you’re on a budget, dried beans are the way to go for real.

Breakfast throughout the week has been those Trader Joe’s English Muffins with either a hard boiled egg or some PB and jam or some fruit.  We haven’t tried the TJ tempeh yet, but I will give a detailed report.  We also haven’t spent any more money this week yet.  The weekend still beckons and we may need some more eggs for Sunday brunchin.

But yeah, beans!
