Raw Brussels Sprout and Radish Salad

Quick ‘n easy. Just shred the sprouts, chop the radishes, then mix in a bowl with some cashews, lemon juice, olive oil, salt. We ate this for dinner tonight, along with some tofu fried rice that we made from some leftover cooked brown rice, tofu that Tina started marinating on Monday, some scallions and diced fresh ginger (leftover from ginger tea we made last week, so not overpowering), all sauteed in sesame oil.

Finally something to do with all those radishes from the greenmarket. I had been making radish salad (http://bit.ly/cuOxio).

Inspired by this, I went to the farmers market and also saw mammoth kohlrabi. I never thought of eating it raw but this recipe for kohlrabi and apple slaw is delicious and light. A good alternative to cole slaw for that summer picnic: http://bit.ly/a5dvHb

  6. I love Brussels Sprouts but I’ve never really had them “raw” until now. I love your recipe but I also want to share mine with you – my recipe is so simple but SOOO good!!! http://cuceesprouts.com/2010/09/shaved-brussels-sprouts-salad/
