Raw Brussels Sprout and Radish Salad

Just shred the sprouts, chop the radishes, then mix in a bowl with some cashews, lemon juice, olive oil, salt. We ate this for dinner tonight, along with some tofu fried rice that we made from some leftover cooked brown rice, tofu that Tina started marinating on Monday, some scallions and diced fresh ginger (leftover from ginger tea we made last week, so not overpowering), all sauteed in sesame oil.
Yum! Sounds like a great meal:)
i love brussel sprouts but have never tried them raw. looks great!
