Fast Chickpea Salad
Posted: December 24, 2010 Filed under: Tina Wrote It Leave a commentNot knowing what to make the other night with some pretty bare cupboards, we searched the fridge and managed to find parsley, some bits of cut up peppers, roasted beets and cooked chickpeas. Threw everything in a big bowl with lemon juice, olive oil, salt, pepper and a bunch of other spices and we ended up with a hearty, fast, easy and colorful side dish. Happy Holidays!
