Weekend Food

We made some lovely food this weekend that didn’t make it to the camera (accidentally deleted a few pictures).  Thanks to a friend who was tired of some produce in her CSA, we scored some potatoes, a monstrous beet, 6 ears of corn and a bunch of fresh herbs.  We made:

  • Fresh corn and mint salad (adapted from this NYT’s recipe)
  • Roasted potatoes with garlic and rosemary
  • Pototo and Beet Oven “Chips”
  • Fennel Frond Garlic Soup (veggie broth, lots of chopped garlic and fennel fronds simmered, pureed and then reheated with an egg swirled in)
  • Black-Eyed Pea Fritters (loosely based on this recipe, I just used the legumes for protein’s sake)
  • Homemade Whole Wheat Pop Tarts w/fig-quince and peanut butter filling
  • Roasted Beets w/Dill
  • Roasted butternut squash w/molasses and sea salt (squash obtained from the garden)

    Black-eyed Pea fritters are so amazing! LOVE! You can also use black beans (or really any bean but black is really nice).
