A little side dish to go with tonight’s dinner, this Carrot and White Radish Salad might be a new potluck favorite. We had a few turnips from last week that needed to be used up, so I peeled and chopped up 6 small radishes into half moons and cut 2 carrots into matchsticks. A tablespoon of sunflower seeds, a small splash of olive oil and a larger splash of lemon juice, some salt and pepper and then a bit of tahini to round it all out and a nice little side dish was created. Give it a shot! The earthiness of the radishes with the tang of lemon juice, sweetness of the carrots and richness of tahini were an excellent combination.
