Purple Patties and Plantains

Tina put together some black bean patties last night (hence the purple).

We served them with a side of tostones, plantains begin 25 cents apiece at the Pioneer. For the tostones, just slice the plantains into thick-ish disks and fry in olive oil, adding salt, pepper, and garlic as desired. Traditionally they would be deep-fried, but we went light on the oil and they turned out fine.
