Got Me a Squash, It Seats About 20

After all the June rain, Tina’s mom’s garden has gone into overdrive. She came back from a visit today with more collards, some lettuce, a few cukes, and a series of mutant zucchini. Submitted for your perusal:



One is going to be made into zucchini bread for sure, but we’re not sure what to do with the other two.

    Do you have a food dryer? My mom slices zucchini thinly, then pops it in the food dryer and sprinkles it with herbs and spices. It makes tasty chips that way.

    It’s also good dredged in flour and corn meal then fried, a la fried green tomatoes.

  2. Yeah – stuff it! Big squash and zucchini make the perfect vessel for stuffing.

    My favorite is vegetarian chili. Hollow that puppy out, stuff it, wrap it in foil or you could even use soaked corn husks or grape leaves and bake it.

    Hmmm good!

    I’ve been obsessed with spiralizing zucchini lately – definitely check out the recipes on my blog if you can get your hands on a spiralizer!

    Slice thinly along with some potatoes and cook gratin-style in some veg stock or cream or creme fraiche. Maybe salt the zucchini slices first so it doesn’t end up water-logged.

    Those are so huge! My mother grows them like that, too. I pick mine when they’re about 4-6 inches…

    These are delicious peeled, cut into about 4 big slices and steamed until tender and served with butter and freshly ground black pepper and sea salt.
    Grew up on them !

    stuff it…slice it & bread it and bake it…make it into its own soup (cream of)…broil it with olive oil..sautee it with tomatoes…freeze it/dry it for later…cakes…pancakes…muffins…grill it…sneak it into pastas and rice dishes (and gratins)…give it to neighbors and friends (and tell them you dont want zucchini bread in return)…want some of mine?….

      -Sarah, I told my mom they might be a bit sweeter tasting and easier to handle if she harvests them a little smaller…we’ll see!

    We measure out portions (whatever your favorite recipe calls for) of shredded Zuchini and freeze it for future Zuchini bread.

    We used ONE whole squash for chocolate zucchini bread, ONE for various dishes (pasta with zucchini, polenta w/zucchini) and ONE as a topping for grilled pizzas that we made while on vacation this weekend. There was also some raw nibbling since it was so fresh and tasty.

    Been there – our first year growing zucchini was so overwhelming that my little sister got me the book 101 ways to cook zucchini for christmas. This year we are better prepared, but our zucchini and summer squash are growing slowly. Maybe I’ll eat my words in a couple of weeks. . . but it’s a good book that I look forward to cooking through this summer. I agree to stuff the zucchini and use recipes that call for shredded zucchini
