Raw Week: Day 2

We had muesli for breakfast and “chili” for lunch again today. Still tasty, still not hot.

We got back rather late from work today, so didn’t have a lot of time to make dinner. We ended up having two salads; a green one with some of Tina’s homemade adzuki bean sprouts (very tasty!) and a raw beet and mustard greens salad with lemon zest that had been marinating since last night in cider vinegar, lemon juice, and olive oil. For some added protein, we had carrot sticks with cashew butter that Tina brought home from work.

The real prize, however, was dessert. We had raw vegan “soft serve” puree from frozen bananas (they’ve been in the freezer for an indeterminable period of time) and peanut butter. Very rich and sweet!

    If you put small beans (small white, lentils, etc.) in the freezer after soaking, they get quite tender! You could try that for protein, too.

    Thanks! That’s a great idea. Stupid question, but do you thaw them outside of the fridge for a day when you’re ready to eat them?
