Mmmm, piping hot pancakes!!

This past weekend we kind of ran out of breakfast type things. We still had/have oatmeal, but didn’t feel like eating that on Sunday. I had bought some flax seeds from the Coop on Saturday night for 19 cents (leaving us with about 80 cents from last week’s budget) and thought I could use them as an egg substitute for pancakes or something. We didn’t have much flour left either, so I created a pancake/biscuit/scone thing out of wheat, rice and corn flour as well as some oats, ground flaxseeds, baking powder and some soy milk. I admit, I even threw some bourbon in their to add more liquid to the mix (we needed soy milk for coffee!). What happened? Some super hearty pancakes came out of the skillet and we had them with some pear compote that I made with chopped up pears, vanilla simple syrup, cinnamon and ginger. The whole thing came out pretty good! I don’t really have a recipe though since I just threw many things into the mix.

    They were definitely vegan! I used a combo recipe from The Post Punk Kitchen (pancakes) and a gluten-free pancake recipe I found on the web. Super filling.
