What We Ate Today: Inauguration Edition

- Breakfast: Oatmeal with strawberries (left over from the weekend’s french toast) and trail mix we had sitting around in the pantry, coffee (thanks work-place)
- Lunch: Leftover vegetable lasagna from last night
- Dinner: Tina made some delicious seitan steaks, along with some red quinoa and a potato edamame stir-fry situation. It was delicious and probably warrants a post of its own, but we didn’t actually eat much of it because our friend Kelly invited us to partake in her surplus of homemade vegetarian sushi rolls.
So, two days strong with the mooching. How long can it last?

Yay, thanks for doing this “what we ate” feature. One thing that becomes very apparent even in just two days worth of meals is that incorporating leftovers (which you do creatively) is important. And, I don’t think readers are going to thing you are meeting your budget by “mooching” – after all, the one time you didn’t meet your goal was because you had friends over for dinner – so it all balances out. That dinner sounds amazing, by the way!
