Black Eyed Pea Salad

Went great with couscous wrapped up in…corn tortillas? Incongruous, yet satisfying.

I like the idea of putting it in corn tortillas! Sounds delish.
We make black-eyed pea salad here with balsamic vinegar, garlic and olive oil and it is called Texas Caviar
