So Many Tomatoes

Last night’s dinner featured a variation on a socca, white bean and couscous patties (leftovers) with tomato sauce, roasted cherry tomatoes and baby eggplants and a raw green salad (garden bounty).
We spent $2.00 on peanut butter and .50 on 2 bananas (banana bread made w/leftover oatmeal), so we’ve got $3.00 left to spend this week

I’m still at the point where I don’t think there could ever be too many home grown tomatoes! Unfortuneately our vines have seriously slowed in production. But for the past 5-6 weeks, we’ve been eating a tomato focused meal every 2-3 days – and we still feel like we could eat more tomatoes!
Zucchini on the other hand. . .
I wish I had too much zucchini, I can think of a ton of things to make!
