Cold Cucumber and Avocado Soup
Posted: July 28, 2010 Filed under: Recipe, Soup, Tina Wrote It, Veggies 9 Comments »Inspired by a soup we had at Char 4 a month or so ago, we decided to make a cold cucumber and avocado soup at home with cucumbers from my mom’s garden. This recipe couldn’t be any easier.
Cold Cucumber and Avocado Soup
Ingredients:
- 2 medium cucumbers (peeled, seeded and chopped)
- 1 ripe avocado (peeled and chopped)
- 1-2 cups veggie broth
- juice of one lime
- salt, to taste
To Do:
- Put the cucumbers, avocado, 1 cup of veggie broth and the juice of one lime in a blender and blend.
- If you want to thin out your soup, add more broth.
- Taste and add salt as desired.
- Chill if you want it colder.
- Top with homemade croutons if you have some around and slurp it down.

This looks yummy. I just posted a recipe for buttermilk avocado soup that we REALLY enjoyed. I’d love to try this variation.
I make this; but throw a jalepeno in the mix for a little kick <3
It sounds really fresh and healthy. Your croutons looks so amazing…how do you make them?
Nothing fancy. We just cut up some slightly stale bread into cubes, sprinkled some salt and olive oil on them, then put them in the toaster oven at about 350 for ….umm…maybe 15 minutes or so?
This looks so easy and delicious. Your site really inspires me to spend less on processed foods, eat healthier and find good recipes.

Thanks!!! We are going to make this for our team’s summer solstice party. We have yummy Cali avocados…and a tree outside our office that gives a few good ones when the squirrels don’t eat them.
