Escarole and Garlic Soup

When I read about this soup a few weeks ago, I immediately thought YES! It was a cool and gross day and the idea of a garlic-y escarole soup was immensely appealing. I forgot that we took a picture and meant to write about it, so here is the soup to make this weekend (especially if it’s a cooler weekend and you’re craving soup).
