Light Dinner

Trying to use up some of the veggies left over from last week (and some leftover rice from last night), we made a hodge-podge warm weather dinner tonight: asparagus and poached egg over toast, with some rice and kale on the side, topped with homemade carrot ginger dressing (also from last night).

Masa Harina Cookies

I improvised these cookies today based loosely on this cornmeal cookie recipe. They’ve got tequila in them instead of vanilla!
Masa Harina Cookies
1 1/2 cup masa harina
1/3 cup olive oil
1/3 cup butter, softened

This Week’s Receipt

We are JUST making it under budget this week.  I blame on you coffee, delicious, delicious coffee.
Phil spent $6 at our local grocery store on Fresca (a splurge), 12 eggs, 4 rolls and some queso blanco.  That added to $23.81 = $29.81.
