Peanut Butter & “Jelly” French Toast

I really enjoy French toast, but often feel hungry an hour or two after eating it.  The added protein of the peanut butter and fiber from the ground flaxseeds make this a heartier brunch option that can fuel you until supper.

Rosemary Crackers & Smokey Thai Eggplant Salad

We actually made this last week and it was real tasty.  The Rosemary Crackers are really Smitten Kitchen’s flatbread, but they came out more like crackers than any kind of bread.  The Smokey Thai Eggplant salad is from Food & Wine with some modifications – we didn’t use the tomatoes, kaffir lime leaves, the cashews [...]

Marinated Teriyaki/Peanut Tofu w/Steamed Chard & Quinoa

After the camping trip, we had to drop off the car at my parents house and since we didn’t have time to stay for dinner, my mom pressed upon me the marinated tofu she was planning on BBQing. My mom likes to feed people…a lot. I believed she used this to marinate the [...]

Black Bean & Sweet Potato Chili

I first came across this flavor combination as a burrito fulling in the Moosewood Restaurant Low-Fat Favorites cookbook. It came across my mind the day after camping because we had a sweet potato in the pantry and black beans that I had cooked and frozen the week before.  We also had crushed tomatoes leftover [...]

This Week’s Receipt Just a Number

Sorry folks, I have no idea where the receipt went. It got lost between the Coop and the doctor’s office. According to my debit card, the total for this week was $20.31. I am going to attempt to list everything from memory (as having the receipts posted actually helps me with [...]

Camp Food

Back from the wild. Here’s some of the stuff we ate.

Korean-style spicy tofu and veggies.

Strawberries with rosemary, ginger, and tarragon. Served over roasted marshmallows.

Mujadarrah with couscous.

Roasted corn in husk.

Freshly-caught freshwater bass. Not vegetarian, obviously, but certainly frugal and DIY.

Bourbon roasted apples over oatmeal.

Campin’

Breakfast Tinfoil Potatoes
Tomorrow we head for Westchester and then to the Adirondacks where our canoe camping adventure begins. I’m excited about the campfire cooking.  As Phil mentioned earlier, we’re making Mujadara, but serving it over couscous in order to cut down on cooking time. I’ve already made and frozen the caramelized onions and [...]

This Week’s Receipt

I’m just going to include the whole receipt even though there are a whole lot of items that we’re using up for the camping trip (see, lentils, nut seed & dyno mix, veggie broth powder, couscous, lemons, plastic ziplock baggies and onions) that I wasn’t thinking should be part of the receipt since it’s vacation, [...]

Into the Wild

This weekend, the 30/Week household is going camping with friends up in the Adirondack State Park. More specifically, we’re going camping on a little island in a big lake in the Adirondack State Park that we will be reaching by canoe.
Campfire cooking is one of my favorite kinds of cooking. For one thing, [...]

Hasselback Potatoes

We had a bit of a twist on the tradtional “meat & potatoes” dinner last night.  Homemade seitan steaks marinated with a paprika and red pepper spice rub, some brocolli roasted in the oven and the gorgeous Hasselback Potato you see in the photo above.  I used the recipe from Sea Salt With Food verbatim, [...]
